Quinoa Salad with Cranberries and Feta

I made this salad for a family BBQ at the weekend and it was an absolute hit. The savoury flavours of the quinoa, cheese and the pine nuts pair so well with the sweetness of the cranberries and sun dried tomatoes. If you're looking for a quick and healthy summer salad, then this could be your recipe - it's so simple to put together and jam packed with loads of delicious flavours. And not only does it taste great, it also looks pretty impressive too...


Quinoa Salad
with Cranberries and Feta Cheese
Gluten Free, Refined Sugar Free.

250g Quinoa 
1 Courgette 
1/2 Aubergine 
75g Feta Cheese 
25g Dried Cranberries
25g Sun Dried Tomatoes
A handful of Pine Nuts
Olive Oil
A large handful of rocket

Prepare the quinoa according to the cooking instructions and leave to cool. Meanwhile, slice the courgette and aubergine into slices, season, drizzle with a little olive oil and place under the grill until slightly charred. Toast the pine nuts in a frying pan over a medium heat, until golden brown. When the grilled vegetables have cooled, toss with the quinoa, crumbled feta, cranberries, sun dried tomatoes, and sprinkle with the toasted pine nuts. Enjoy!
